Champion Sommelier of the Balearic Islands 2011
This sommelier, originally from Granada, began his gastronomic career in earnest at the Escuela de Hosteleria in Palma de Mallorca where he read for his degree and developed his passion for wine, spirits and gourmet products.
In Mallorca he has worked at the Hotel Portixol, at the Gran Hotel Son Net and alongside sommelier Miguel Angel Gener, at the Bens D'Avall Restaurant. He then went on to manage several gourmet shops alongside famous Mallorcan Chef Benet Vicens, and also worked as sommelier at S'Atic Restaurant in the Port of Soller. He has also worked at Cocinaria, a gourmet shop in Palma where he was in charge of food and beverages and used run a full program of food and wine themed courses.
Toni has taken part in the Balearic Sommelier Competition on several occasions and was awarded second place in 2008. He has also been a judge in several sommelier and barman competitions and is a member of the Balearic Association of Sommeliers.
'I am passionate about wines which have a soul. Wines that have something to say.' Toni tries wines from all over the world, and is always on the lookout for interesting wine and food combinations, but what he loves most of all is learning and teaching; passing on his knowledge to those around him.
