Small winery receives maximum recognition
Son Prim is a small, family winery located in Sencelles, Mallorca. In 1993 its owner, Jaime Llabrés, decided to replant the family vineyards with the aim of improving the quality of the wines that were produced year after year for personal consumption. As such, the old plants were substituted with grape varieties more appropriate for aging like Merlot, Carbernet and Syrah. At the same time, a new and modern wine cellar was built in time to inaugurate the first harvest in 2004.
In any case, Jaime is always looking to create something new. He was one of the first winemakers in Mallorca to produce a white wine from a red grape, namely of the Merlot variety. This wine, already in its third year, continues to be a resounding success.
He explains how he produces the white Merlot: ' The process of pressing the grapes has to be very quick, but at the same time very soft so that the grapes aren't spoilt too much. Afterwards, the must is separated from grape as quickly as possible.' The result is a fresh wine with a golden rosé colour.
The wine estate of Son Prim covers an area of six hectares and the vineyards are located close to the road that connects Inca to Sencelles. Apart from the white wine, Jaime produces three red wines of a single grape: Cabernet Sauvignon, Merlot and Syrah. In 2010, he launched his new wine: a coupage that includes Cabernet, Merlot and a native Mallorcan grape, Mantonegro. The wines are aged in French, American and Hungarian oak barrels for a period of five to 12 months.
The winery's new project for 2012 will be to produce a rosé wine.
2010 saw the first coupage by Son Prim, which has been very well received and is made using Cabernet, Sauvignon, Mantonegro and Merlot.
Son Prim has a history of winning medals and continues to receive the maximum recognition for its wines, in 2009 it won several prizes at the prestigious competition organized by Prowein in Germany (Gold Medal for Son Prim Merlot 2006, Gold Medal for Son Prim Syrah 2006 and Silver Medal for Son Prim Cabernet 2006).
Son Prim is the only Mallorcan winery to have all its wines recommended by the GRAN GUÍA PEÑÍN DE LOS GRANDES VINOS DE ESPAÑA, the most important wine guide in Spain.
