    Sobrassada

    La Sobrassada es uno de los alimentos más típicos y particulares de la gastronomía mallorquina. Es un embutido típicamente elaborado durante las 'matanzas' de cada otoño, donde durante unos días, se mata a los cerdos y se elaboraba embutidos como la sobrassada o el butifarrón para tener carne para el invierno. Elaborada con carne magra de cerdo y tocino, se mezcla con pimentón y más especias dependiendo del sabor que se quiere conseguir y se mete dentro de un intestino de cerdo cosiendo los extremos con cuerda. Luego se cuelga del techo para el proceso de curación, que puede durar unas doce semanas. La deshidratación de la carne produce su sorprendente sabor.

    Es de apariencia única; de color rojo fuerte, un color totalmente natural, conseguido por la mezcla de ingredientes. Existen varios tipos de sobrassada diferentes; entre ellos La Rizada, La Bufeta, La Poltru, y la más espectacular de todas; La Bisbe, que puede pesar hasta 30 kilos.  Dicen que el nombre Sobrassada viene del embutido italiano 'Soprassata', una especie de salami.

    La sobrassada se come tanto frío como caliente. Quizás la manera más típica de disfrutar de ella es sobre una rebanada de pan tostado, pero también se come frita con miel o huevos de codorniz, en ensaimadas especiales de carnaval, como relleno en pastas y, de cada vez más, como ingrediente en recetas gourmet.

    Sobrassada

    Sobrassada is a cured sausage meat which is one of the most typical and most particular of Mallorcan foods. Originally sobrassada was always made during the 'Matanzas', the pig slaughter festivities which still take place every autumn. The meats are made into sobrassada and other sausages like butifarrón so that they will keep during the winter months. Sobrassada is made of minced pork mixed with paprika, pepper and other spices, depending on the desired taste. The mixture is put inside a pork intestine which is sown up with string and left to hang for up to twelve weeks of curing.

    Sobrassada is of a very unique appearance, each sausage has a different shape and it is always a very bright red, which is surprisingly a completely natural colour produced by the mixture of ingredients. There are various types of Sobrassada; all with different names; Rizada, Bufeta, Poltru, and the most impressive of all is the Bisbe, which means Bishop in Mallorcan and can weigh up to 30 kilos. The name sobrassada has a clear connection with the Italian sausage 'Soprassata', but it is not known whether its Italian relation is a predecessor or descendant of the Mallorcan version.

    Sobrassada is eaten both cold and hot. The most common way of enjoying it is by spreading it on some toasted Mallorcan bread, but it is always served fried with honey or quails eggs, as a topping for ensaimadas during Carnaval, as a filling for pastries, and it is becoming more and more common to find it as one of the ingredients in a gourmet recipe.
