Organically Produced Extra Virgin Olive Oil

The Extra Virgin Olive Oil 'Es Verger' is the only olive oil on the island made at an estate where wine is also produced. The Fullana family is following an ancient Mallorcan tradition by combining olive trees and vines on the same country estate. Es Verger has been able to successfully combine the two and to produce high quality wines as well as high quality olive oil.

Es Verger produces a very small quantity of extra virgin olive oil because it prefers to always put quality first. The olives are picked directly from the tree, any that have already fallen are not used, and this guarantees the freshest raw product and is also vital for achieving the correct rate of acidity between 0.1 and 0.2%. It is also important to note that the olives at Es Verger are picked at exactly the right point of ripeness, when they are still quite green, giving the oil a wonderfully fresh, herbaceous taste.

Miquel believes that 'a good olive oil has to have these herbaceous aromas', and he is willing to limit his production rates in order to achieve it. The estate would be able to produce more oil if they waited to let the olives get riper but Miquel and his family are convinced that the sacrifice is worth it to be able to enjoy pure Mallorcan 'olive juice' at its very best.
