Claudio nació en Chile y viene de una familia con una larga historia en la restauración. Su trayectoria de más de 10 años incluye un extenso conocimiento de la cocina europea y sud americana, y le gusta experimentar con diferentes sabores y texturas de otras culturas como la asiática. Es lo característico de su cocina: poder mezclar sabores del mundo.

Claudio nos explica: 'Lo importante es no dejar de lado el sabor que es la materia prima, que para mi es lo esencial. O sea, la materia prima no se altera. Pero los sabores se pueden mezclar entre la fusión española thai, por ejemplo o la sud americana thai...y hoy en día hay muchos productos internacionales que se pueden usar para una cocina de fusión.'

Claudio was born in Chile and comes from a family with a long history in the restaurant business. His own career spans over 10 years and includes an extensive acquired knowledge of South American and European cuisines. He also likes to experiment with different flavours and textures from other cultures such as Asia. This is the main characteristic of his signature cuisine: mixing the flavours of the world.

Claudio explains: 'The important thing is not to change or modify the raw material and products. This is fundamental for me. However, flavours can be mixed to create a fusion between Spanish and Thai, or South American and Thai cuisines for example...and nowadays there's a great variety of international products available for a fusion cuisine.'

Claudio is the chef-owner at Essencia Restaurant in Santa Catalina, Palma.
