White wine from red grapes
Jaime Llabrés is always looking for ways on how to improve things and to create something new. The owner of the Son Prim wine estate in Sencelles was one of the first winemakers in Mallorca to decide to produce a white wine from red grapes - from the Merlot grape. The 'Son Prim Blanc de Merlot' was bottled for the first time last year, and was sold so successfully that Jaime decided to continue. 'I just wanted to try something new', explains the wine-grower, who founded the Bodega in 2004.
How can one make white wine from red grapes? First of all, the pressing of the grapes has to be done very quickly, and very softly, so that the grapes are hardly crushed during this process. At the same time, the contact between the juice and the skins of the grapes has to be quite short. It means that juice and skin have to be separated as quickly as possible. The result is a beautiful and very light rosé colour.
The mallorquin winemaker Jaime, who has had 'many professions' over the years, is now cultivating his vines in different vineyards located next to the road connecting Inca to Sencelles. The vines of Son Prim cover a total area of six hectares. The white wine is not the only product the 50 year old winemaker offers. The range of his wines also includes three red wines: Cabernet Sauvignon 2005, Merlot 2005 and Syrah 2005. His wines age between five and twelve months in oak barrels from France, the United States and Hungary.
None of his wines bear the designation of origin 'Denominación de Origen Binissalem'. On the labels you will only read: 'Vi de la Terra Mallorca'. The reason for this is that Jaime is using only three grape varieties: Merlot, Cabernet Sauvignon and Syrah. These are not traditional grapes originating from Mallorca as demanded by the Designation Control Board of Binissalem.
But this does not mean that Jaime does not proudly present his wines at international Wine Fairs in a very successful way. His wines have been singled out for awards on several occasions. For example, in 2006 the Cabernet Sauvignon 2004 and the Syrah 2004 were awarded silver medals at the well-known Concours Mondial in Brussels. Only one year later he was convincing the jury again: He received Silver for his Merlot 2005.
